Domaine des Terres Rouges was founded in 1990 by master distillers in Collonges-la-Rouge in the Corrèze. The striking red stone buildings of this medieval town gave this mustard factory its name.
The company specializes in flavored mustard with the sensual flavors of the Nouvelle Aquitaine region: truffles, figs, Espelette pepper and much more.
In 2015, the Domaine des Terres Rouges set off on its long journey to the other end of France and settled in the village of Mietesheim in Alsace. The company thus joined Maison Alélor, a specialist in condiments since 1873, which it completed as a delicatessen brand. Alélor strives to both preserve and enrich the traditional recipes of the Domaine des Terres Rouges. The adventure continues with the development of new recipes inspired by its new home in Alsace: mustard with Riesling, beer or ready-to-use mild horseradish.

Known since ancient times for its medicinal properties, the mustard of the Domaine des Terres Rouges is the legacy of artisanal know-how.
Mustard seeds or mustard grains are planted in March. Young plants are covered with yellow flowers from May. The mustard seed harvest takes place
in August. This culture has almost completely disappeared from France. In Alsace, it reappeared in 2006 on the initiative of Alélor-Domaine
des Terres Rouges in collaboration with the Chamber of Agriculture of Alsace. Today, a dozen farmers sow and harvest mustard seeds
in the Bas-Rhin on 70 hectares of cultivated land. The mustard seeds are crushed and ground using a stone mill. The flour is mixed with vinegar and water for several hours until you obtain a fine and creamy mustard. The recipes for making mustard are very varied.
Strong from Dijon, old-fashioned, sweet or flavored with walnuts, truffles or Espelette pepper, Domaine des Terres Rouges offers more than 25 different flavors. Sweet horseradish is made from horseradish root, a pungent-tasting plant grown in Alsace. This white and natural condiment can be enjoyed as an aperitif or as an accompaniment to meat, fish or vegetables.
