In 1905, Joseph Grellier invented the round, golden-brown biscuits to delight his village of Saint Michel. He owed his success in part to his wife Constance; she had the idea to sell the galettes to the ladies from the city who came to bathe on the coastal beaches. The biscuit factory was opened in 1919 as a result of the brand founder's resounding success. He chose a hen as the brand symbol, which is emblematic of rural France and good products. He continues the French biscuit tradition and reinvents it, especially with the Roudor, the Sablés de Retz, or the delicious Madeleines de Commercy. To this day, St. Michel is an independent French family business and proud of it; it has made it its mission to pass on the taste for good food to future family generations.
